Ingredients
  

  • 3 medium sized zucchinis grated
  • 1/4 cup green onions finely sliced
  • 1/4 cup fresh dill finely chopped
  • 1/4 cup fresh parsley finely chopped
  • 1/2 cup feta cheese crumbled
  • 4 medium sized eggs
  • 1/2 cup all-purpose flour
  • 1 cup vegetable or canola oil for frying
  • 1 tsp salt

Instructions
 

  • Begin by grating the zucchinis and placing them on a clean kitchen towel. Sprinkle with salt and let them rest for about 10 minutes, allowing excess moisture to escape.
  • Give the grated zucchinis a good squeeze to bid farewell to any lingering moisture. Welcome them to a mixing bowl, where the magic happens.
  • Toss in the thinly sliced green onions, chopped fresh dill, finely chopped parsley, crumbled feta cheese, flour and eggs. Mix until well combined. If the mixture is too thin, add a bit more flour to thicken it up.
  • Now, it's time to get sizzling! Heat oil in a pan over medium heat (about 1/4 inch deep), making sure it's hot enough to give your fritters that irresistible crispiness.
  • Using a spoon, carefully drop portions of the zucchini mixture into the hot oil, forming your fritters. Let them sizzle and fry until they're beautifully golden brown. Around 2-3 minutes on each side.
  • Once they've achieved that coveted golden hue, remove the fritters from the pan and place them on a plate lined with paper towels. This step helps absorb any excess oil, leaving you with fritters that are crisp, not oily.
  • Serve your Turkish Zucchini Fritters warm, and paired with a creamy Tzatziki dip!
