The BEST Turkish Potato Salad

Ingredients
  

  • 5 pounds Yellow potatoes
  • 1 cup chopped fresh parsley
  • 1 cup chopped spring onions
  • 1/2 cup extra virgin olive oil
  • 1 tbsp dried dill
  • 1 tbsp lemon juice
  • 1 tsp sumac (optional)
  • 1 tsp red pepper flakes
  • 1 tsp salt

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Peel the potatoes, cut them in to large chunks and add to the boiling water. Cook until soft. Usually about 13-15 minutes.
  • When the potatoes and cooked, remove them and place them in to a cold water bath until cool. Then place them in a large bowl.
  • Chop the fresh parsley and spring onions and then add them to the potatoes.
  • Combined the remaining ingredients in a small bowl and mix well. Add this to the potatoes and gently mix, being careful not to mash the potatoes.
