Spinach Feta Pasta

Ingredients
  

  • 2 tbsp salted butter
  • 3 tbsp extra virgin olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 4 cloves pressed garlic
  • 1 28oz can diced tomatoes juices half drained
  • 2-3 cups spinach
  • 1 cup diced cooking onion
  • 1/2 cup pitted Kalamata olives
  • 1 box dried Capellini Pasta roughly 400g per box
  • 1 cup crumbled feta cheese

Instructions
 

  • In a large pot, bring 4 liters of water to a boil. Add in 1 tbsp of olive oil and the Capellini pasta. Cook pasta for as long as directed on the box. Roughly 3-5 minutes
  • While the pasta is cooking, heat a large pan on medium heat, sauté the onions, garlic, salt, pepper and Italian seasoning with the butter and 2 tbsp of olive oil, until onions become translucent. About 3-4 minutes.
  • Add in the half drained can of diced tomatoes, spinach and olives. Cook until spinach is soft and has turned a darker green color. About 4-5 minutes.
  • Once the pasta is done cooking, drain and add the pasta to the rest of the ingredients and mix well.
  • Plate portions, top with crumbled feta cheese and serve!
