Mini Grilled Fig Jam Brie Sandwiches

Mini grilled fig jam brie sandwiches are a delightful blend luscious fig jam, creamy brie cheese, fresh arugula & olive oil grilled baguette.

- 1 sliced baguette loaf 1/2 inch slices
- 8 ounces sliced brie cheese
- 1/4 cup fig jam
- 2 tbsp olive oil
- 1 cup fresh arugula
Lightly brush one side of each slice of baguette and lay oiled side down on a pan on medium heat.
Add slices of brie to half of the baguette in the pan and grill until baguette slices are toasted and are light-medium brown in color and cheese is slightly melted. (approximately 1-3 minutes)
Remove from pan and add some fresh arugula on top of your brie cheese and then add a dollop on frig jam on top of the arugula.
Top it off with the other baguette to completely your mini sandwiches and serve!
