Easy Greek Cod Recipe - Baked (30 mins)

  • 1 oven safe baking dish

Ingredients
  

  • 2 Cod fillet
  • 4 tbsp olive oil divided in half
  • 1/4 cup marinated artichokes
  • 3 shallots diced
  • 1/4 cup sun-dried tomatoes
  • 2 tbsp capers
  • 1/4 cup fresh parsley finely chopped
  • 2 cloves garlic minced
  • 1 lemon or 2 tbsp lemon juice
  • 1 tsp paprika
  • 1 tsp rep pepper flakes optional
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Rinse the cod fillets under cold water and pat them dry using paper towels.
  • Coat each side of the cod with half of the olive oil. Season the cod fillets with salt, pepper, paprika and red pepper flakes on both sides.
  • Place cod in an oven safe baking dish and add in olive oil in areas surrounding the fish.
  • Surrounding the cod, add in the minced garlic, finely chopped parsley, diced shallots, marinated artichokes, sun-dried tomatoes, capes and lemon juice.
  • Bake in the oven uncovered for 15-25 minutes, depending on how thick your fish is.
  • Serve with your choice of side, such as rice pilaf and enjoy!
