Creamy Chorizo Gnocchi

Ingredients
  

  • 1 lb packaged Gnocchi or 500g
  • 1.5 cups dry chorizo sausage sliced in to bite sized pieces
  • 1/2 cup diced onions
  • 1/2 cup diced mushrooms
  • 1.5 cups heavy cream
  • 2 tbsp butter
  • 1/2 cup grated parmesan cheese
  • 2 tbsp olive oil
  • 2 cloves minced garlic
  • 2 tbsp Italian seasoning
  • salt and pepper to taste
  • 1/4 cup chopped fresh parsley (optional)

Instructions
 

  • Cooked the sliced chorizo on med heat in a large pan until slightly crispy on each side and remove.
  • Remove the fat from the pan and then add the butter, onions, mushrooms, gnocchi, minced garlic and olive oil. Stir and cook until onions are translucent.
  • Add back in the chorizo sausage and then add the heavy cream and stir well. Bring to a light boil and let simmer for 5 minutes.
  • Add in the grated parmesan cheese and mix well. Garnish with salt and pepper to taste and chopped fresh parsley and serve!
