The BEST Turkish Potato Salad
Ingredients
- 5 pounds Yellow potatoes
- 1 cup chopped fresh parsley
- 1 cup chopped spring onions
- 1/2 cup extra virgin olive oil
- 1 tbsp dried dill
- 1 tbsp lemon juice
- 1 tsp sumac (optional)
- 1 tsp red pepper flakes
- 1 tsp salt
Instructions
- Bring a large pot of salted water to a boil.
- Peel the potatoes, cut them in to large chunks and add to the boiling water. Cook until soft. Usually about 13-15 minutes.
- When the potatoes and cooked, remove them and place them in to a cold water bath until cool. Then place them in a large bowl.
- Chop the fresh parsley and spring onions and then add them to the potatoes.
- Combined the remaining ingredients in a small bowl and mix well. Add this to the potatoes and gently mix, being careful not to mash the potatoes.
