- Make your sauce while the pasta is cooking.
- Purchase pre-crumbled packaged feta cheese.
- Use a vegetable chopper to swiftly chop those onions and save your tears.
- Purchase package garlic that is already peeled!
- Use a garlic press instead of mincing your garlic with a knife.

Spinach Feta Pasta
Ingredients
- 2 tbsp salted butter
- 3 tbsp extra virgin olive oil
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1 tsp ground black pepper
- 4 cloves pressed garlic
- 1 28oz can diced tomatoes juices half drained
- 2-3 cups spinach
- 1 cup diced cooking onion
- 1/2 cup pitted Kalamata olives
- 1 box dried Capellini Pasta roughly 400g per box
- 1 cup crumbled feta cheese
Instructions
- In a large pot, bring 4 liters of water to a boil. Add in 1 tbsp of olive oil and the Capellini pasta. Cook pasta for as long as directed on the box. Roughly 3-5 minutes
- While the pasta is cooking, heat a large pan on medium heat, sauté the onions, garlic, salt, pepper and Italian seasoning with the butter and 2 tbsp of olive oil, until onions become translucent. About 3-4 minutes.
- Add in the half drained can of diced tomatoes, spinach and olives. Cook until spinach is soft and has turned a darker green color. About 4-5 minutes.
- Once the pasta is done cooking, drain and add the pasta to the rest of the ingredients and mix well.
- Plate portions, top with crumbled feta cheese and serve!
