Easy Pita Bread Pizza Recipe
Ingredients
Dressing
- 4 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- 1 cloved pressed garlic
- 1/2 tsp Dijon mustard
- salt and pepper to taste
The pizza
- 4 round pita bread
- 1 cup hummus
- 1 cup diced tomatoes
- 1 cup diced cucumber
- 1 cup diced preen pepper
- 1 cup diced red onion
- 1/2 cup halved Kalamata olives
- 1 cup crumbled feta cheese
Instructions
- Combine your ingredients for the dressing in a small bowl and mix well.
- In a larger bowl combine your diced tomatoes, cucumber, green pepper, red onion, Kalamata olives, crumbled feta cheese and dressing and mix well.
- Lay out for 4 pita breads on a cutting board and lather a layer of hummus to each one.
- Take your Greek salad you just made and add a layer on top of the hummus. Don't be afraid to be generous!
- To serve, just cut your finished pita bread pizza in to quarters or smaller triangles and voila!
