Creamy Chorizo Gnocchi
Ingredients
- 1 lb packaged Gnocchi or 500g
- 1.5 cups dry chorizo sausage sliced in to bite sized pieces
- 1/2 cup diced onions
- 1/2 cup diced mushrooms
- 1.5 cups heavy cream
- 2 tbsp butter
- 1/2 cup grated parmesan cheese
- 2 tbsp olive oil
- 2 cloves minced garlic
- 2 tbsp Italian seasoning
- salt and pepper to taste
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Cooked the sliced chorizo on med heat in a large pan until slightly crispy on each side and remove.
- Remove the fat from the pan and then add the butter, onions, mushrooms, gnocchi, minced garlic and olive oil. Stir and cook until onions are translucent.
- Add back in the chorizo sausage and then add the heavy cream and stir well. Bring to a light boil and let simmer for 5 minutes.
- Add in the grated parmesan cheese and mix well. Garnish with salt and pepper to taste and chopped fresh parsley and serve!
