Easy Salmon Pinwheels
Equipment
- 3-4 wooden skewers
Ingredients
- 1 salmon fillet skin removed
- 6 ounes plain cream cheese
- 5 cups fresh spinach
- 1/2 cup diced onion
- 2 cloves minced garlic
- salt and pepper to taste
Instructions
- Heat olive oil in a pan on medium heat. Add in your onions and cook until translucent. About 3 minutes.
- Add in the spinach and garlic and cook until spinach is wilted. Around 2 minutes
- Add in the cream cheese, salt and pepper and stir until smooth and creamy and then remove from pan and set aside.
- Lay your salmon filet on a flat surface and remove skin if there is any. Slather a layer of the spinach and cream cheese mixture along the length of the salmon and then roll up in to a log.
- Insert your wooden skewers to hold the salmon wheel in place and then cut in between them so that each pinwheel has a skewer holding it.
- Cook your salmon pinwheels in a pan on medium heat or on a grill until cooked through. Around 5-6 minutes on each side. You may want to adjust your cook time, depending on how thick your pinwheels are.
- Serve along side a fresh salad of grilled vegetables!
